Wet Chemical Systems vs. Older Dry Chemical Hood Systems

Wet Chemical, the current standard

Agent: potassium based liquid. Action: cools the grease and saponifies it, turning it into a soap-like foam that smothers the fire and resists re-flash. Code status: required under NFPA 17A for new installations and most retrofits.

Dry Chemical, older systems

Agent: powder based. Action: smothers the flame but does not cool the grease itself, which carries a higher re-flash risk once the powder settles. Code status: largely phased out for new commercial kitchen hoods, though we still find and service it in older Valley buildings.
